Watching The Birdies And Some Muffins

Genie is pretty used to having birds in her backyard and they are pretty used to her. The mourning doves, who I guess aren't the sharpest crayons in the box, don't even seem to notice her most of the time, I've seen them get within a few feet of her, just bobbing along, and unless she moves it's like out of sight, out of mind. She was sitting under the bird feeder the other day, looking up as a dove, blissfully unaware of the danger lurking below, happily pecked away. Then she moved and it of course flew away with that weird chirping that doves do when they fly away.

She didn't give up, though, hoping it would come back.




Now, for those of you who are muffin deprived, being on a low carb diet like me, those of you who have been missing muffins for years, I have a solution! I was researching low carb biscuit mixes, I had tried a brand a few years ago that was not very good, Carbquick or something like that, where I made one batch of biscuits and then threw the rest of the box of mix away. I found a low carb vendor who has a store in North Hollywood and a website full of low carb foods. It's called LowCarbU.com and I ordered some biscuit mix that I haven't tried yet, some low carb cinnamon bagels that I did try and were very good for a low carb bagel, and an orange cranberry muffin mix that came out absolutely delicious.
I also got some low carb pancake mix that was pretty good although a little on the rubbery side. It was also a little difficult to keep the pancakes separated in the pan because the batter was really runny and I ended up just making one big pancake.

The prices are not cheap, most of the mixes run around $7.99 per box or bag, but they do ship quickly if you order early in the week (no shipping on Friday for some reason) and since they are just down the road in North Hollywood, so far the two orders I've gotten from them have come the day after they shipped.

My second order came yesterday and this morning I made the carrot muffins which taste good but kind of coconutty, since the main ingredient is dried coconut. The mix makes 12 standard size muffins so they come out to about 70c each not counting the eggs and oil and all that you have to add to the mixes. But, for someone who has been without muffins for so long, well worth the price even if I do have to bake them myself. They also don't have any sugar alcohols in them, I have found that sugar alcohols, like the ones in sugar free chocolate candies, give me incredibly bad bad bad stomach aches and gas.


These are the other muffin mixes that I got and will try soon.

I haven't tried to make my own muffins because Lassens has very tasty gluten-free ones. I get carrot-raisin and cranberry-orange ones to eat for lunch as they are quite filling.
I do have some gluten-free Bisquick, but haven't used it except for drop biscuits (the dough is too crumbly to roll out, but I like drop ones better anyway.)
