The Last Rain

Last night we had what was probably the last of the rain for the season. April showers and all that. We even had a weather alert on the TV, where you hear the emergency beeping and then the announcer tells you to watch out for hail and lightning and to get yourself inside the house so you don't get hit by lightning. We didn't get the hail here but did see lightning flashes off over the mountains and heard some thunder.

That's our excitement for the week there.

It has been rather dull around here, a little more dull than usual.

I did have a dream the other night that Keith was on Jeopardy or some game show like that on TV and he won $300000. That was exciting. Until I woke up. And was kind of annoyed at him because he didn't really win any money.

And here is the second salad idea that I made last weekend when it was so hot.

Southwestern Chicken Salad

1/ cooked chicken- again, cook your own or buy the precooked Southwestern seasoned chicken strips.
2/ romaine lettuce, chopped or sliced or torn or whatever- I buy the romaine hearts that come 3 in a bag and get them all crispy by washing them and then wrapping each heart in a paper towel and putting it in a sealed plastic bag to chill. I am real picky about my lettuce and if it's not crispy and cold and is all wilty or has those weird spring greens in there that make me think I'm grazing in a field, then no thanks. Gross.
3/ about 1/2 can of drained and rinsed black beans, chilled.
4/ corn, from a can or some frozen corn that is rinsed and thawed, and again, chilled.
5/ chopped tomatoes.
6/ crunchy tortilla strips for salads- make your own or buy the bag with the tricolor strips in it- so festive!
7/ grated cheddar cheese.
8/ ranch dressing.

Put the lettuce on plates or big low soup bowls, sprinkle with the beans and corn, add tomatoes, top with chicken, cheese, and tortilla strips, add dressing. Eat.
